Traders Point Creamery

Last Friday we had a fabulous evening at Traders Point Creamery, a local creamery in Zionsville.
Every Friday night during the summer they have a farmers market and "Dining on the Deck." Bug and I also got there early enough to get a tour of the farm and to see them milk the cows. She was thrilled to peices.

Although it's really a dairy farm, Bug was more impressed with the chickens. What you can't get from the picture is her constant "Chic-y! Chic-y!" as she fearlessly chased the poor birds all over the fields.
...and even into the coop.

Dinner was good, the market was great. And at the end of the night, we got classic Bug - not quite ready to leave.
This picture pretty much sums up Bug's mood swings these days. Can you say, "Drama Queen" ?

Happy Birthday to Me!

Even at age one I was a ham. Bug really had no chance.
Hard to believe I'm yet ANOTHER year older. I've had a wonderful birthday so far. We stated the celebrations as a family last Friday night with a trip to Traders Point Creamery and dinner on the deck - amazing - more on that to come.
Saturday night we had a real grown-up date to Plum's Upper Room. The food was AMAZING. The atmosphere was wonderful. The company was stellar. Afterwards, we strolled main street in Zionsville and got desert at a cute little cafe. To top the evening off, we saw Harry Potter - which has inspired me to re-read the books, of course.
Today the plan is a homemade dinner by mom, with my family. Yum. And Flying Cupcakes for desert!
Anyone else notice that my birthday celebrations are always centered around food? Hmm... don't care. That's the way I like it!
Here's to another wonderful year!

Tasty Tuesday - Fruit Salsa

This yummy recipe came from allrecipes.com, where it has an average of FIVE starts - rated by 2,040 people. After I saw that, I figured, it MUST be good. And believe me, it is.

The original recipe is on the website, but I'm giving you my version below.
And make sure to double to the cinnamon chip recipe, because they go fast.

Annie's Fruit Salsa & Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 oz frozen raspberries, thawed
1 pound strawberries
2T white sugar
2T brown sugar
3T apricot fruit preserves

10 (8 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

Preheat oven to 350 degrees F (175 degrees C).

Cut flour tortillas into wedges and coat each side with butter flavored cooking spray. Put cinnamon sugar in Ziploc bag. In batches, shake 4-5 chips in the cinnamon sugar. Spread in a single layer on baking sheet.

Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Annual Soccer Tourney

Weekend before last was the annual soccer tournament. Jon & Erin, Phil, Kim & Baby Natalie all came down to visit - while Jon and Uncle Kyle played in the tourney. Baby Bug and Baby Dub had their fair share of fun too.

Nearly new Baby Natalie, making her debut appearance on the Lazy Blog.

We also had our first ever bonfire at the new house... but I was feeling lazy, so no pics. I can assure you, it was fun!

Tasty Tuesday - Cheese Ravioli Bake

I got this recipe off another blog ages ago. And while I don't make this all that often, I do make it consistently - which is really saying something for me.

The biggest reason I don't make it all the time is my anti-spinach/anti-tomato husband. But sometimes, I just want this delcious dish so bad that I selfishly say, "I don't care if you don't like spinach or tomatoes, this is what we're having for dinner." And you know what, it's so cheesy-good, he eats it with a smile.

Cheese Ravioli Bake

2T butter
2 garlic cloves, minced
1 (28oz.) can diced tomatoes
2T coarsely chopped fresh basil
1/3c heavy cream (or ½ and 1/2)
Salt & pepper
2 (8oz.) packages fresh cheese ravioli
1 (6oz.) package fresh baby spinach
1c shredded mozzarella cheese

Bring 4 quarts water to boil in large pot for cooking pasta. Meanwhile, heat oven to 450 degrees. Grease shallow 2 quart baking dish with cooking spray.

Melt 2T butter in large skillet over medium heat. Add garlic and cook until fragrant but not brown, about 30 seconds. Add tomatoes, increase heat to high, and cook until thickened and almost dry, about 10 minutes. (At this point, I also use my potato masher and break up the tomatoes a little more, so the pieces aren’t so big for the non-tomato lover.) Stir in basil and cream and simmer until sauce thickens, about 2 minutes. Season with salt and pepper.

Add 1T salt and ravioli to boiling water and cook until al dente (typically about 4-7 minutes). Add spinach to pot with pasta just before it is done and stir until wilted, about 30 seconds. Drain pasta and spinach, return to pot, and stir in tomato sauce. Transfer to baking dish, sprinkle with cheese and back until top is golden, about 10 minutes. Cool 5 minutes before serving.

Boy or Girl?

Let’s take a moment to talk about baby #2, aka Baby Awesome.

Why Awesome? Well, because he is.

(Also, we’re big fans of the show “Chuck” – and if you watch it, you understand - but I would seriously like to name this baby Awesome.)

We have some back-up names that are a little less far-out. But you internets will probably always know him (or her) as just plain Awesome.

Until we find out what we’re having – which we will, God willing – baby Awesome is - in my head - a boy. If this is not a boy I will be surprised. Mostly because it’s been very different than my last pregnancy, and nearly everyone I know has recently had girls, and we really need some more boys out there to even things out. Either way, we’ll be very happy with Awesome, boy or girl.

Not that this is different from Baby #1, but I’m tired. And nauseous. Again, not new, but I was hoping by 13 weeks the repulsive taste in my mouth would be gone. And that I would have enough energy to get a few more boxes unpacked.

I have the wonderful pregnancy symptom that you never actually throw up, you just feel like you’d really like to – pretty much all the time. The inside of my mouth is HOT. And tastes Horrible. And water tastes worse than any other substance on earth. I will drink it – but it has to be CRAZY cold, and it’s better if you squeeze some lime in.

Normally I have the world’s biggest sweet tooth. But these days I’m craving meat, cheese and salt. That’s the biggest difference between this pregnancy and the last. That’s why I think it’s a boy too – boys like meat. Right?

Now, just because I posted this, we’re having a girl.

Money Pit

A little about our new house.

Whew.

Well, to tell you the truth we’ve been feeling a little like we got magically transferred into the movie “The Money Pit.” Until just a few days ago, it’s been pretty much non-stop house/appliances falling apart since the day (before) we moved in.

It started with the huge 50 gallon tank of water that the seller dumped all over the (carpeted) living room floor while we were at closing – where we had to tear up the carpet, replace the pad and the house still smells like mildew.

And then there was the water softener – which was there, but didn’t work – and the receptacle – that they were supposed to install, and did, but not to functioning.

Oh, and did I mention that after J replaced the water softener and added a new whole house water filter (we’re on a well) the kitchen sink faucet no longer worked? So we had to buy and replace that too.

And while we were at it, the air conditioning stopped working – which we got fixed after a week or two. And then there were some uncapped loose wires hanging out on the back porch, and when J went to cap them the air conditioning stopped working again.

Oh and the dishwasher doesn’t work either – well, technically it runs, but when it makes the dishes dirtier than when they went in, I don’t count that as working. So we bought a new one of those this weekend too. Hopefully J will get that installed ASAP, because hand washing dishes is really getting old.

We’ve got lots more fun things and projects that have come up – some that we knew about going in – others that were surprises. I thank goodness that J is so handy, because otherwise we would have been in some serious trouble on this house. I felt pretty bad for him, though. One day he just looked at me and said, “I’m so tired of being wet.”

Trust me, we’re still REALLY happy we bought this house. Every day when I look out my windows it seems like I’m living in a park. I can’t see a single neighbor’s house from any window – which is a pretty big change, considering at our last house I could look INTO my neighbors bathroom.

At first when we moved in, I felt like we were camping. The street is pitch black at night, so you can really see the stars – it was so dark it took some getting used to. And when it rains, the sound of the rain on the tree canopy sounds like you’re in a tent. We also have tons of birds, squirrels, chipmunks, rabbits and toads. The toads are my favorite. And there’s a bird house with a Wren living in it that we can see from the kitchen table. Bug and I call it our “Wren-Friend.”

The increase in actual bugs is taking some getting used to… but considering my aversion, I think I’m handling it quite well.

And all in all, the catastrophic hiccups seem to be waning. We’re settling in and trying to get those darn boxes unpacked. We finished painting Bug’s bathroom last night – one down, about 10 to go!

Did I mention I’m NEVER moving again?
